The terroir at Hathersage is very similar to the Haute Médoc in that the duplex soils here mimic the soils along the Gironde. Also the day-time and night-time temperatures throughout the year are identical. The one difference between Hathersage and Bordeaux is the amount of summer rainfall and a small amount of water is added to the vineyards at Hathersage during the summer months.
Chardonnay 2011
Hathersage Chardonnay is produced from fully ripened grapes that are matured on their lees to create a bouquet of crusty baked bread. Currently the wine is showing citrus flavours, but as time goes by flavours from the old oak barrels, where the wine was stored, will yield hints of butterscotch or hot buttered toast with marmalade.
Cabernet Sauvignon 2009
Hathersage Cabernet Sauvignon has a complex bouquet dominated by aromatic blue berries with underlying earthy notes. On the pallet the wine is full bodied, supported by structural tannins that give way to a lingering finish of pencil shavings and dark chocolate.

The wine was vinified with a soft pressing and allowed to barrel - mature for 18 months before bottling. Cabernet Sauvignon and Merlot combine seamlessly in this red blend to provide an elegant bouquet of red-berried fruit with a rounded pallet of soft tannins and organic earthy flavours.

On the nose, Hathersage Sauvignon Blanc offers a bouquet of fresh citrus notes. The 2011 vintage is really opulent and certainly reveals an expression of the farm’s terrior. Currently the wine offers flavours of green peppers or green asparagus on the palette. In time the wine will develop a lingering concentrated mineral chalky finish.

Hathersage 2008
This wine is the first vintage of a new blend at Hathersage, which will eventually become the signature red that clearly indicates the farm’s terrior. Up front, the wine has a noticeable aroma black currants, or black cherries. The wine is fruit-driven on the pallet with strong Merlot characteristics of fruitcake or plum pudding. These give way to dusty tannins that are formed largely from the Cabernet Sauvignon, and the wine’s finish is spicy or peppery, as we have added a little Cabernet franc. In future the Cabernet Franc component will be increased and we are looking forward to the development of this blend over the years.
